"Gramps" Buttermilk Coconut Pie

Meet "Gramps Cinnamon Roll" the reindeer! He lives at the North Pole and is one of Santa's bakers. He loves to make Santa's FAVORITE old fashioned coconut pie. Let's see how he whipped this pie up down below! 

 

Ingredients:

  • 1 unbaked 9-inch pie shell
  • 3 1⁄2 ounces flaked coconut, divided
  • 1 1⁄4 cups sugar
  • 2 tablespoons all-purpose flour
  • 1⁄2 cup butter, melted
  • 3 eggs, beaten
  • 1⁄2 cup buttermilk
  • 1 teaspoon vanilla
  • OPTIONAL: you can top with whipped cream and toasted coconut flakes

Directions:

  • Mix the flour and sugar in a bowl.
  • Add buttermilk, eggs, melted butter, 2/3 coconut and vanilla.
  • Mix up well and pour into pie shell.
  • Sprinkle some remaining coconut on top.
  • Bake at 325° for 1 hour or until it's set up.
